Florida strawberries are in peak season right now so it’s the ideal time to serve this festive salad at your holiday next lunch or dinner.
– 1 lb. spinach
-1/2 cup shelled pecan
-1/3 cup raspberry red wine vinegar
-1/2 cup sugar
-1 tsp. dry mustard
-3/4 cup vegetable oil
Wash spinach and trim larger stems, place in salad bowl. Wash and slice strawberries and add to the salad. Sprinkle in the pecans. To make the dressing, blend raspberry red wine vinegar, sugar, dry mustard and oil. Pour over salad and toss lightly. Serve immediately.
